Lemon and Cumin Potato Salad

Vegan potato salad

Potato salad without mayonnaise? I was sceptical when I first came across the concept, but the flavours work well enough together that you don’t miss the mayo, I promise! This recipe is very budget-friendly, as potatoes, onions and cumin are all very cheap. Lemons and fresh parsley may be slightly more expensive, but parsley is easy to grow and you can use bottled lemon juice if you need to.   [Read more…]

Roasted Curried Cauliflower

Roasted curried cauliflower

I didn’t have any kiwifruit, so I used an orange instead and added some red cabbage I had in the fridge along with the kale, to give it more texture and colour. I also don’t have a Thermomix, so I used my food processor. [Read more…]

How I Learned to Love Brussels Sprouts (And You Can Too!)

Roasted Brussels sprout

As a child I didn’t like Brussels sprouts – I think this was partly because kids were not “supposed” to like them and partly because my mum would prepare them by boiling them into oblivion. As an adult I never cooked them until last year, when I came across a recipe for roasted Brussels sprouts that promised to convert haters.  [Read more…]
