Eggs and Veggies – A Simple Breakfast

Eggs and veggies breakfast

Lately I’ve been trying to get some veggies in at every meal. This is easy to do for lunch and dinner, but breakfast can be a bit of a challenge. Sometimes I have a green smoothie, but if I’m feeling like something more substantial, I whip up a pan of eggs and veggies.

This a simple, flexible recipe that’s tasty and filling. It’s also a great way to use up any odds and ends of veggies that you have in the fridge to reduce your food waste. I usually add onion, tomato and some sort of greens, but have also used zucchini, capsicum and potato when I have them on hand.

You end up with a cafe-style dish for a fraction of the price, plus you don’t have to get out of your pajamas to eat it!

Eggs and Veggies - A Simple Breakfast
Serves: 1
  • 1 Tbsp ghee or butter
  • 2 eggs
  • 1 cup of random vegetables (I use onion, tomato, zucchini, capsicum, spinach, kale, herbs, potato, or whatever else I have lying around)
  • 1 rasher of bacon (optional)
  • ½ an avocado (optional)
  1. Heat the ghee or butter in a frying pan.
  2. Add the veggies in the order of cooking time. For example, add onion, potato and bacon (if using) first, then things like zucchini, capsicum and tomato. Add any greens last.
  3. Once the veggies are soft, spread them out in the pan and crack the eggs on top of them. Break the yolks and spread the eggs out as much as possible.
  4. Cook until the whites of the egg have just set.
  5. Sprinkle with avocado (if using) and fresh herbs and enjoy!

    • Random veggies have definitely been getting away from me lately and so I’m making a real effort to reduce my food waste now that I have more time 🙂

  4. That would make a good, light dinner, but I suppose doing so would work against your goal of veggies at every meal! I have to admit, I find it a lot easier to work fruit into my day than veggies.

    • It does make a great (and fast!) light dinner as well. I also find it easier to work fruit into my day because it makes such a great snack. I like carrots as a snack, but not many other veggies!
