Menu Plan Monday – Christmas Week

Every Monday I link up with Menu Plan Monday at The Organising Junkie. Because I don’t actively menu plan, I found that posting the plan retrospectively works for me. So my menu plans involve what I ate over the last week.

I know that’s not technically Christmas yet, but we had two family Christmases on the weekend, complete with delicious lunches. I think over the two days I ate just about every type of meat there is! On Christmas day we will be having a much smaller gathering, with just my parents, my brother, my grandparents and me.

Earlier in the week I focused on eating up all of the food I had in the fridge before flying down to Melbourne on Thursday night. I’m hoping this will mean no food waste when I get back. –

Monday – Leftover pulled pork (from the freezer) with cheese, sour cream, avocado, tomato and rocket.

Tuesday – Grilled eggplant topped with cheese, with bacon, red onion and cucumber.

Baked chicken with eggplant

Wednesday – Baked chicken with grilled eggplant, tomatoes and rocket.

Salad on the plane

Thursday – I used all of the veggies I had left in the fridge to make a salad to eat on the plane to Melbourne. I also took some leftover grapes and bought a (very expensive) bag of nuts at the airport.

Takeaway thai food

Friday – Takeaway Thai food with my parents. We had Pad Thai, satay pork and Massaman curry.

Saturday – The first Christmas lunch. We had an antipasto platter, barbequed lamb and beef with lots of different salads and roast potatoes.

Then chocolate cake, strawberries and cream for dessert.

Sunday – The second Christmas lunch. We had prawns, then roast pork, turkey, chicken and ham with roast potatoes, pumpkin and carrots and cauliflower cheese.

Then we had homemade plum pudding with brandy sauce and cream for dessert.
