Twice-Baked Potatoes with Kale (52 Weeks of Kale)

Apparently today is National Kale Day, which makes the second post in my 52 Weeks of Kale series very appropriate. Today I’m going to share a recipe for some comfort food: twice-baked potatoes with kale.

After going to the Farmer’s Market at the Gold Coast, I had lots of kale and potatoes, so was searching for a recipe for kale and potato bake. Instead a recipe popped up for twice-baked potatoes with kale and broccoli. I’d heard about twice-baked potatoes from Jen at Healthful Saver and though they looked yummy, so decided to give them a go.

Twice baked potatoes (adapted from greatist.com)

Ingredients (serves 2)

2 large potatoes
1 cup broccoli florets, chopped roughly
1 red onion, diced
5 leaves of kale (any type), chopped roughly
1 rasher bacon
3 Tbsp tasty cheese, grated
1 Tbsp butter
Salt and pepper
Method:

Preheat oven to 200C (400F)

Microwave potatoes on HIGH until soft. Then steam the broccoli in the microwave – I do this by putting it in a bowl with some water and microwaving it for 2-4 minutes until tender.

Heat butter in a frying pan and sautΓ© onion and kale until soft. Then sautΓ© the bacon until it is crispy and chop into small pieces.

Scoop the flesh out of the potatoes, leaving a layer of about 2cm around the edges. Put the potato flesh, onion, kale and broccoli into a food processor and process until nearly smooth. Season with salt and pepper.

Scoop the filling back into the potatoes. Top with bacon and cheese. Bake for 15 minutes.

Enjoy with salad πŸ™‚

  1. I haven’t made anything with kale recently, but may try the potatoes you feature. How can you go wrong with cheese, bacon, and potatoes? What is a rasher of bacon?

    And I’m glad I wasn’t the only one who’d never heard of a rasher. πŸ™‚ Is that term only used for bacon, or anything in a long strip?

    • Weird, I call it a rasher too! Must be more ‘aussie’ – it’s the eye with the stipey bit attached. I prefer to just buy the ‘eye’ which has some technical term I currently forget! We had baked potatoes the other night – I don’t think the BF expected much, but with sour cream, bacon and sweet chili they were enjoyable. Yay for a practically vego (and cheap) meal the boy likes!

      • Baked potatoes are such a great meal. When I was a volunteer and cooking for around 20 people on a strict budget we often made baked potatoes (but with mince instead of bacon because it was cheaper!). People were often worried that it wasn’t a proper meal, but once you add sour cream, mince, cheese and salad, it definitely fills you up.
