52 Weeks of Kale – Green Smoothies


In September 2013 I decided to expand my repertoire of kale recipes by posting a new recipe every week. The 52 Weeks of Kale project was born!

Today’s recipe is a short, sweet one. Green smoothies have become very popular lately and are a great way to get extra greens in your diet. The trick to making a good kale smoothie is to include lots of fruit to cover the taste of the kale. I also like to include lemon juice to counteract the sweetness of the fruit, and to help with the absorption of iron from the kale.

Green smoothie food processor

Ingredients (makes two small or one large smoothies)

1 frozen banana

1 handful frozen berries

1 handful of kale, stems removed

1 mango

1/8 cup lemon juice

1 cup water


Place all ingredients except the water into a blender or food processor. Blend until smooth, then add water until the smoothie is thin enough to drink.

  1. That actually sounds like I might be able to swallow it without gagging. Sometimes I look at green smootie recipes and get an involuntary shudder!

    My one attempt at a green smoothie involved trying to use up a surplus of zucchini (I think you call them courgettes there?) Anyhow, they taste kinda buttery, and the smoothie ended up tasting soooo rich that I literally couldn’t make myself swallow it. So there’s one to skip! 🙂

  2. I’m really not a smoothie person–not enough anyway to clean up the blender for one. However, I wouldn’t be against trying a green one. They’re all the rage at my work.
