Every Monday I link up with Menu Plan Monday at The Organising Junkie. Because I don’t actively menu plan, I found that posting the plan retrospectively works for me. So my menu plans involve what I ate over the last week.
Last weekend after the Problogger conference I headed to the Gold Coast Organic Market to pick up some veggies. I was super-happy to find most of the stalls had bunches of organic kale for much cheaper than non-organic kale at the supermarket (when they have it!), so bought up big.
This meant kale featured quite a lot in my menu this week, and I have even more stocked away in the freezer for the upcoming weeks. And I will be making an effort to get to the organic market here in Brisbane at least every few weeks.
Monday – Dinner with my landlords: roast lamb with potato, pumpkin and green beans.
Tuesday – Grilled lamb chops with grilled kale and baked potatoes topped with kale pesto (above).
Wednesday – Kale and chive omelette.
Thursday – Baked potato topped with cheese, mustard, salsa, sauerkraut and ginger carrots, and salad made with kale, avocado, red onion, sprouts and blood orange. And I got a bit behind on the dishes so had to eat from a ramekin and bread and butter plate
Saturday – Baked chicken drumsticks and Broccoli with Chinese five spice powder.
Sunday – Slow-cooked lamb shoulder with Moroccan spices, with roasted beetroot, fennel, sweet potato, red onion and garlic.
