Homemade Sweet Potato Fries

I often had hot chips for dinner – not the healthiest or most balanced meal! I still enjoy chips as a side dish but now make my own from scratch, so I can control the ingredients and make them even more delicious.

These chips are made with sweet potatoes, which is an extra bonus because sweet potatoes are one veggie that you don’t need to worry about buying organic. After my night on the town recently I woke up craving some greasy food, so made a batch of these and they were amazingly good paired with some homemade aioli.

They do take a while to bake, so they’re definitely not “fast food” but they are worth it.

Ingredients:

  • 1 large sweet potato (or 3-4 large normal potatoes)
  • 3 tbsp coconut or olive oil
  • 1 tbsp curry powder (I use Keen’s brand, which I love)

Method

Preheat the oven to 200C (400F).

Cut the sweet potato into long thin chips. Place them in a bowl with the oil and curry powder and toss until well combined.

Place chips in a single layer on a tray and bake them for 45 minutes. If they’re not crispy enough after this time, bake them for another 10-15 minutes.

Enjoy! I love them with homemade burgers or baked chicken.
