Frozen Fruit – My New Favourite Dessert

Because it is summer here, I’ve been making the most of summer fruits like mangoes, nectarines, plums and peaches. The markets sell large quantities of very ripe fruits (remember the tray of 19 mangoes for $10?), which I have bought and turned into jams and relishes. I also froze some, thinking I would use them at a later date to make more jam.

Then one day it was hot and I was hungry and I decided to eat some mango straight out of the freezer. It was delicious and I was hooked. Next I tried frozen nectarines, which were just as tasty, and peaches, which weren’t quite as good (maybe because they weren’t quite as soft).

This is a very simple, completely natural, sugar-free dessert. I didn’t even bother peeling any of the fruit, just removed the stones, cut it up into chunks and froze it. Now to buy some more fruit to keep for the winter months.
