Menu Plan Monday – Half a Week

Every Monday I post my menu from the previous week. This is partly to share gluten free vegetarian recipes with you, my readers, and partly so I can keep a record of what worked and what didn’t.

Because I am currently away doing the last bit of fieldwork for my PhD, this week’s menu plan only goes from Monday to Friday last week. And I forgot to take photos of a couple of the dishes (which is a shame because the banana curry was a very interesting bright yellow colour!).

Monday – Thai banana curry with coconut rice. We got a lot of bananas for 29c a kilo at the market, and decided to make up this curry by cooking them with some chilli, lemongrass, turmeric and coconut milk. It was actually pretty tasty and I’m sad I forgot to take a photo.

Tuesday – Slow-cooker vegetarian Irish stew.

Wednesday – Roasted pumpkin and quinoa salad, with homemade sauerkraut (above).

Thursday – Enchiladas and nachos made with Mexican beans and topped with avocado, tomato, silverbeet (chard), red onion and tomato relish.

Friday – Takeaway Chinese food because we were out and hungry.
