Menu Plan Monday – A Short Week

This past weekend we were out for dinner both nights at a wedding and a welcome home party, which meant we didn’t cook either of those nights. We are also going away for a well-earned break on the weekend, meaning we only need to cook dinner Monday through Thursday this week. I’m continuing with the gluten-free diet, so am including a lot of rice noodles and Asian dishes.

So the four meals planned for this week are:

Vietnamese rice paper rolls

Vegetarian Pad Thai

Baked polenta with mushrooms and blue cheese

Cauliflower and kale bake with salad

  1. How’s the g-free diet going? Do yo think its helping?

  2. We were out most of the weekend, so I didn’t have time to plan a menu. Tonight we’re having tuna mac. We’ll see what the rest of the week holds.

  3. Tuesday – Burger night. This time I will be using some patties that we made on Sunday, that comprise: carrot, lentils, four bean mix, quinoa, and other things. We usually use the Frys burger patties but we had left overs.

    Wednesday – Cauliflower and carrot curry.

    Thursday – Maybe just a pasta.

    Friday – Something from the freezer. We have bolognese, vegetable soup or home-made baked beans to choose from.
